The parsley and lemon juice helps cut the effects of the garlic. Bulgur is a lot better than it sounds if you have never had it, it has a nice texture, actually better than rice and i love rice.

I have just started getting into Bulgur. There should be a better name for Bulgur, it taste much better than it sounds. It is just wheat, but has a wonderful nutty flavor better than brown rice and stores forever and cooks as easy as oats.
